Ingredients

Adjust Servings:
For the biscuits:
80g Ground almonds
30g Coconut flour
40g Unsweetened cocoa powder
pinch Salt
50ml Almond milk
1/4 cup Coconut oil
4 Tbsps Truvia (Stevia)
2 Tbsps Maple syrup or honey
For the filling:
40g Coconut butter
1 tsp Vanilla extract
1-2 Tbsps Maple syrup or honey

Healthy Homemade Oreos

A healthy homemade version of everyone's favourite cookie, that's gluten-free, dairy-free and also happens to be vegan-friendly.

Pre-heat the oven to 170°C and line a baking sheet with grease-proof paper.

Place all of the dry cookie ingredients (the first 5 ingredients in the list) in a large mixing bowl and stir to combine. In a separate bowl, mix together the remaining wet cookie ingredients.

Slowly pour the wet mixture into the dry mixture and mix it all together to form a thick dough.

Although this is not necessary, it helps to refrigerate the dough before baking, and this also makes it much easier to cut your cookie shapes, so I leave the dough in the fridge for up to 1 hour. If you're pressed for time, you can skip this step.

roll out the dough onto a flat surface and cut out round shapes using a circular cookie cutter. Make sure they are all the same size, and don't make them too thick as they will be sandwiched together later.

Place the cookies onto the baking sheet and bake for 10-12 minutes. Set aside and allow them to cool.

Meanwhile, prepare the filling by mixing together all of the filling ingredients above. If using the cookies & cream whey, you may need to add a little splash of almond milk to help it mix.

Once the cookies have cooled, spread a layer of the filling onto one cookie, then top it with another. Repeat this process until all the cookies have been 'sandwiched'. Store in the fridge.
