Who needs KFC?

Instead of deep-frying chicken in breadcrumbs, I first coat my chicken in ground almonds, an alternative to flour which is gluten-free and full of healthy fats, protein and fibre. There’s no frying necessary here – These are then baked in the oven without using any oil, making them a much healthier alternative, but still just as crispy and more-ish.

Preheat the oven to 180°C. Meanwhile, cut the chicken breast into small strips.

In one bowl, beat the 2 eggs together.
In a separate bowl, add the ground almonds and mix together with all the remaining spices.

Take each chicken strip and dip it in the egg mix, then proceed to dredge it though the ground almond mixture to get an even coating. Some may need a double-dip! Place each coated chicken tender on a lined baking tray.

Bake for approx. 20-25 minutes, turning them halfway through cooking, until the chicken tenders have turned crispy and golden. Serve either warm or cold, alongside your favourite dipping sauce.
