Ingredients

2 ripe Avocado
1 large Egg
80g Unsweetened cocoa powder
40g Gluten-free flour
150ml Almond milk
40g Dark chocolate use a dairy-free chocolate if necessary
20g Coconut oil
1 tsp Vanilla extract
100g Honey or Maple Syrup sub. for maple syrup or agave nectar

Preheat the oven to 180°C and prepare a baking tray with some non-stick spray or parchment paper.

Scoop out the flesh from 2 ripe avocados and add to a blender or mixer.

Add 1 egg, coconut oil and vanilla extract and mix well to combine until smooth.

Gradually add in the cocoa powder, self-raising flour, almond milk and sweetener, and continue to mix until combined to form a thick dark batter.

Fold in the chopped dark chocolate.

Pour the brownie batter into the baking tray and place in the centre of the oven. Bake for approximately 25 minutes – until an inserted knife comes out clean.

Leave to cool completely. Then slice into large squares and enjoy!
