Mama Lotties series 3, featuring Fit as Fudge!
In case you missed it, the first episode of Mama Lotties series 3 aired last night on GBC, with a guest appearance from none other than myself! I’m so grateful to everyone who tuned in, as I’ve already received a lot of positive feedback.
This was my first time cooking in front of any kind of audience – I usually only ever cook at home alone! So I was way out of my comfort zone. Luckily, I didn’t seem to come across as nervous as I expected to. It really helped that Justin and the crew made me feel relaxed and comfortable, so any nerves during filming soon wore off.
The program featured Justin and myself showing the viewers how to cook 3 simple, delicious, fresh recipes at home. It kicked off with Justin and I preparing a joint recipe for a super easy starter. Justin then showed me how to prepare his Nando’s inspired main dish. Finally, I closed the show with my gooey gluten-free brownies.

Red Pepper and Caramelised Onion Hummus
Our simple yummy starter was a red pepper & caramelised onion hummus. “Hummus” comes from the Arabic word meaning “chickpeas”. It’s a tasty and versatile dip made from blending chickpeas with tahini, olive oil, lemon juice and garlic. Our take on hummus adds sweet and smoky flavours by adding red peppers and garlic which have been roasted in the oven, and caramelised red onion.
We then served this alongside some multigrain tortillas, which we simply tore into triangles and placed under the grill until crispy. Perfect for dipping.
Justin’s Piri Piri Chicken
For the main course, Justin showed us how we can make the Nando’s favourite piri piri chicken at home, making his own spicy piri piri sauce from scratch. The sauce was chock-full of fresh vegetables like tomatoes, peppers and onions, with some added kick from a few chillis. We used chicken thighs which we marinated beforehand, then cooked in a pan until crispy, before pouring over the homemade spicy sauce.
He also served up his take on “macho peas”. Using frozen peas and cooking them with just some fresh mint, chilli and a pinch of salt, as a fresh, tasty side.
Salted Caramel Brownies
Finally, I showed you how to make the indulgent gluten-free and dairy-free salted caramel brownies which I’ve featured on the blog before. These are so fudgy and moist, you’d never think they were made from just a handful of healthy ingredients. The brownies are then topped with my homemade dairy-free sticky salted caramel sauce.
